Gluten Free Chocolate Almond Donuts

Chocolate Almond Donut Recipe

Ingredients: (Makes 6-8 donuts)

  • ½ cup fine organic almond flour/meal
  • ½ cup organic brown rice flour
  • ¼ cup maple syrup or honey (more if you prefer them sweeter)
  • 2 large organic eggs
  • 2 tsp vanilla extract
  • 1 tbs cinnamon
  • ¼ tsp baking soda

Instructions:

  • Preheat your oven to 300*
  • Lightly grease your donut pan.
  • In a medium bowl, blend together all of the ingredients until dough is smooth.
  • Fill the donut pan ¾ full.
  • Bake for 10-15 minutes, or until a toothpick inserted in the middle is clean upon removal.
  • Avoid overcooking in order to keep them moist.
  • Cool for a few minutes before removing from the pan.
  • These are great as a breakfast item just like this, or you can add the icing per the recipe belowJ

Donut icing:

  • ½ cup @enjoylife vegan chocolate chips
  • ½ tsp coconut oil
  • Warm in the microwave at 30 second intervals until they are melted.
  • Avoid letting the chocolate get too hot, or it will take a while to dry.
  • Dip cooled donuts into the chocolate and place on parchment paper (on a cookie sheet) to dry.
  • Add topping to your preference. Pictured here: sliced almonds, raw coconut, and @enjoylife mini chocolate chips.
  • These will keep in the refrigerator 3-5 days in an airtight container. If they last that long!
