Gluten Free Chocolate Almond Donuts
Ingredients: (Makes 6-8 donuts)
- ½ cup fine organic almond flour/meal
- ½ cup organic brown rice flour
- ¼ cup maple syrup or honey (more if you prefer them sweeter)
- 2 large organic eggs
- 2 tsp vanilla extract
- 1 tbs cinnamon
- ¼ tsp baking soda
Instructions:
- Preheat your oven to 300*
- Lightly grease your donut pan.
- In a medium bowl, blend together all of the ingredients until dough is smooth.
- Fill the donut pan ¾ full.
- Bake for 10-15 minutes, or until a toothpick inserted in the middle is clean upon removal.
- Avoid overcooking in order to keep them moist.
- Cool for a few minutes before removing from the pan.
- These are great as a breakfast item just like this, or you can add the icing per the recipe belowJ
Donut icing:
- ½ cup @enjoylife vegan chocolate chips
- ½ tsp coconut oil
- Warm in the microwave at 30 second intervals until they are melted.
- Avoid letting the chocolate get too hot, or it will take a while to dry.
- Dip cooled donuts into the chocolate and place on parchment paper (on a cookie sheet) to dry.
- Add topping to your preference. Pictured here: sliced almonds, raw coconut, and @enjoylife mini chocolate chips.
- These will keep in the refrigerator 3-5 days in an airtight container. If they last that long!
