Dice 2 medium organic sweet potatoes
Lightly coat them with olive oil and bake 45 min @375 degrees
Roast 1 cup of organic frozen corn with ½ red onion in frying pan w 1 Tbs avocado oil
Add 2 cans black beans or mixed beans
Sea Salt and Pepper to taste
