Vegan Gluten Free Mac and Cheese
Vegan Mac and Cheese!! I am in love!
This is honestly so easy, I just can’t! I’ll share how I made this and feel free to adjust methods or ingredients.
-Boil 10 oz @earthboundfarm organic frozen sweet potatoes until soft. Feel free to use fresh.
-1/2 cup pre-soaked or boiled raw cashews until soft. I boiled them for 5 minutes to soften.
-1 tsp gluten free thickener. I used feel good organics arrowroot powder.
**Other choice… nutritional yeast or corn starch.
-3-6 oz organic oat milk based on desired consistency. I used this last so I could judge the thickness I wanted.
-Spices. I used a sprinkle of white pepper, cayenne, sea salt, and 1 tsp garlic powder. It had a mini kick. Decide what you like. Other options include onion powder, turmeric, and black pepper.
-Mix in blender, adding the oat milk last to judge thickness. It will get thicker as it sits.
Pour over pasta, veggies, etc etc. In this photo I used Ancient Harvest corn/quinoa pasta.
