Ingredients

  • 6 to 8 large eggs
  • 2 medium ripe avocados

  • 2 teaspoons of sea salt
  • Cayenne pepper, to taste
  • Everything but the bagel seasoning, to taste

Instructions

  1. To hard-boil the eggs, place them in a large pot and cover them with cold water. Bring the water to a boil, then turn off the heat and let the eggs sit in the hot water for 10 minutes. Drain the eggs and rinse them under cold water to stop the cooking process. Peel the eggs and cut them in half lengthwise. Carefully scoop out the yolks and place them in a small bowl. Set aside the whites on a large platter.
  2. To make the filling, mash the avocados with a fork in a medium bowl until smooth. Add the cilantro lime dressing, salt, and cayenne pepper, and mix well. Add the egg yolks and mash them with the avocado mixture until well combined. You can also use a food processor or a blender to make the filling smoother, if you prefer.
  3. To assemble the deviled eggs, spoon the filling into a piping bag or a ziplock bag with a corner cut off. Pipe the filling into the egg whites, filling them generously. Sprinkle some everything but the bagel seasoning on top of each deviled egg. Enjoy right away or refrigerate until ready to serve.
