Chocolate Chip Protein Cookies

One Bowl, Gluten-free, Dairy-free, Delicious Chocolate Chip Cookies with Protein and Fiber

Ingredients

  • 3 cups Bob's Red Mill almond flour
  • 1 tsp baking soda
  • 1/4 cup softened coconut oil
  • 1/2 cup pure maple syrup
  • 1 whole egg
  • 3 egg whites
  • 2 scoops protein powder ( I use Gnarly Vanilla Whey)
  • 2 tbs heather's tummy fiber
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 1 1/2 cups dairy free chocolate chips
  • Bonus ingredients crushed almonds and toasted coconut to taste
  • Pure sea salt flakes

Instructions

  1. Preheat oven to 375
  2. Using one bowl, mix the first 5 ingredients together
  3. Blend for 1-2 minutes
  4. Add protein, fiber, sea salt, and vanilla extract
  5. Blend for another minute
  6. Add in chocolate chips and optional ingredients
  7. Bake 10-12 minutes or until the tops peak brown
  8. Remove and immediately add crushed sea salt flakes (this makes the cookie!!)
  9. Move to a cooling rack
  10. I like to store in the fridge or freezer for freshness
