How to make Delicious dairy-free spinach ravioli
Delicious and easy pasta dish that’s dairy-free and plant-based. It’s made with fresh or frozen ravioli, sauteed garlic, onion, and sun-dried tomato, and tossed with olive oil, sea salt, and organic spinach. It’s a great way to enjoy ravioli without dairy, and it takes less than 15 minutes to make.
Ingredients
For this dairy-free ravioli, you’ll need:
- 1 package of fresh or frozen ravioli (I used vegan ravioli from Trader Joe’s)
- 2 tbs of olive oil, plus more for drizzling
- 2 garlic cloves, minced
- 1/4 cup of diced onion
- 1/4 cup of chopped sun-dried tomato
- salt, to taste
- 2 cups of organic baby spinach
- 1/4 cup of Kite Hill ricotta (or any other vegan ricotta)
Instructions
- Cook the ravioli according to the package directions, usually for about 6 minutes in boiling water. Drain and set aside.
- In a large skillet over medium-high heat, heat 2 tablespoons of olive oil and add the garlic, onion, and sun-dried tomato. Cook for about 10 minutes, stirring occasionally, until soft and fragrant.
- Add the cooked ravioli to the skillet and toss to combine with the veggie mixture. Drizzle some more olive oil over the ravioli and season with salt to taste.
- Add the spinach and cook for another 5 minutes, or until wilted, stirring gently.
- Transfer the ravioli to a serving platter or individual plates and dollop some Kite Hill ricotta over each portion.
