It’s a great way to add some healthy fats and antioxidants to your diet.

Here’s how to make Healthy Avocado Cilantro Lime Dressing in a few simple steps:

Ingredients

  • 1 ripe avocado
  • 1/4-1/2 cup Greek yogurt (you can use plain or low-fat)
  • 1 teaspoon of minced or fresh garlic
  • 1/4 cup chopped cilantro
  • 1 lime squeezed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons of honey or maple syrup (for vegan)
  • 2 tablespoons of water to adjust thickness
  • Salt pepper to taste

Instructions

  1. In a blender or food processor, mixed together the avocado, Greek yogurt, garlic, cilantro, lime juice, olive oil, honey or maple syrup, water, salt and pepper.
  2. Process until smooth and creamy, stopping to scrape down the sides a few times.
  3. Thin the dressing out with more water if needed until it reaches a desired consistency.
  4. Store in refrigerator in a glass jar for up to a week.

Tips

  • You can use both the cilantro leaves and stems to make this dressing. Cilantro stems are soft enough that they usually blend up easily.
  • If you have loads of thick long stems tear some of them away but you can save yourself that extra step if you’d like.
  • You can also add some cumin powder or red chili flakes for some spice if you like.
