It’s made with cottage cheese, which is a great source of protein and calcium, and blended with maple syrup, banana, chocolate protein powder, peanut butter powder, and cocoa powder for a rich and creamy texture and flavor. It’s a perfect treat for after a workout, or anytime you need a sweet fix. It serves two, and each serving has about 25 grams of protein. You won’t believe how delicious and satisfying this high-protein chocolate pudding is.

Ingredients

For this high-protein chocolate pudding, you’ll need:

  • 1 cup cottage cheese
  • 1/4 cup maple syrup
  • 1 medium banana
  • your favorite chocolate protein powder (I used whey)
  • peanut butter powder (I used PB2)
  • extra cocoa powder, if desired
  • milk or nut milk, for consistency (I used almond milk)
  • 1/4 cup chocolate chips
  • 2 tbs chopped nuts (I used walnuts)

Instructions

  1. In a blender, combine the cottage cheese, maple syrup, banana, protein powder, peanut butter powder, and cocoa powder. Blend until smooth and creamy, adding milk or nut milk as needed to adjust the consistency. You want it to be thick but pourable, like pudding.
  2. Transfer the pudding to a glass container and smooth the top. Freeze for at least 4 hours, or overnight, until firm.
  3. In a microwave-safe bowl, melt the chocolate chips in 15-second intervals, stirring after each, until smooth and glossy.
  4. Pour the melted chocolate over the pudding and spread it evenly. Sprinkle the chopped nuts over the chocolate and press them lightly to adhere.
  5. Freeze the pudding for another hour, or until the chocolate is set.
