Roasted Dutch Oven Whole Cauliflower Recipe

Ingredients

  • 1 large cauliflower head
  • 1/3 cup olive oil, plus more for greasing
  • 2 tbsp garlic powder, or 4 cloves of minced garlic
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • Salt and pepper, to taste
  • 1/4 cup grated parmesan cheese (optional, omit for vegan)
  • 1/4 cup tahini
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F and lightly grease a Dutch oven with some olive oil. Set aside.
  2. Wash the cauliflower and pat it dry with paper towels. Trim off any green leaves and cut off the stem so that the cauliflower can sit flat in the Dutch oven.
  3. In a small bowl, whisk together the olive oil, garlic powder, basil, parsley, salt, and pepper. Brush the oil mixture all over the cauliflower, making sure to cover every nook and cranny.
  4. Place the cauliflower in the Dutch oven and cover with the lid. Bake for 30 to 40 minutes, or until the cauliflower is soft and easily pierced with a fork.
  5. If using cheese, remove the lid and sprinkle the cheese over the top of the cauliflower. Increase the oven temperature to 450°F and bake for another 5 minutes, or until the cheese is melted and bubbly.
  6. In a small bowl, whisk together the tahini, water, lemon juice, and salt. Adjust the consistency and seasoning as needed.
  7. Drizzle the tahini sauce over the cauliflower and garnish with some fresh parsley if desired. Cut into wedges and serve hot or warm.

Notes

  • Any kind of cheese you works, such as mozzarella, cheddar, or vegan cheese, instead of parmesan. You can also skip the cheese altogether if you prefer.
  • Pick spices you like, such as oregano, thyme, or rosemary, instead of basil and parsley. You can also add some red pepper flakes for some heat, or some nutritional yeast for some cheesy flavor.
  • Choose your sauce you like, such as marinara, pesto, or ranch, instead of tahini. You can also make your own tahini by blending some sesame seeds and oil in a food processor or blender.
