Vegan Banana Nut Zucchini Bread With Chocolate Chips and Walnuts

Delicious vegan, gluten-free banana nut zucchini Bread. Loaded with dairy free chocolate chips and walnuts.

Ingredients

  • 1 & 1/2 cup gluten-free oat flour
  • 1 cup almond flour or coconut flour (feel free to mix the two)
  • 1 cup organic mashed bananas
  • 1 cup finely grated organic zucchini
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 tsp baking powder
  • 3/4 tsp sea salt
  • 1 & 1/2 tsp pure vanilla extract
  • 1/3 C organic almond milk
  • 1/2 C pure maple syrup
  • 1 & 1/2 tbsp vinegar
  • 1/2-3/4 C chocolate chips
  • 1/2-3/4 C walnuts

Instructions

  1. Preheat oven 350
  2. Blend all ingredients except chocolate chips and walnuts(add after blended)
  3. Pour into 9x5 greased loaf pan
  4. Bake 35-40 min
  5. Let sit in oven (turned off) for 10 more minutes
  6. Cool completely before taking it out of the pan💗
  7. Store in fridge
